The Pinot Noirs grapes used to produce this regional appellation cuvée are cultivated on a Prunier climate parcel located between the plots of Gevrey-Chambertin Platières and Grand Champs. As the domain practices rigorous pruning and disbudding to limit the yields, the fifty-year-old or so vines are cultivated with the utmost care. The vines are completely desteemed at the winery, and following fermentation, the wine is aged in barrels, 70% of which are new barrels.
The outcome is a resolutely Gevrey-style wine, with a bouquet of black fruits interspersed with spices, a generous and firm body, leading to a beautifully persistent finish. A wine with a pedigree far superior to that of a simple regional appellation, which can mature for a few years in a cellar and can be served with a rib-eye steak and pepper sauce, for example.

La tenuta a conduzione familiare Sérafin di Gevrey-Chambertin è gestita attualmente dai proprietari della seconda generazione. Questa piccola proprietà di 6 ettari, coltivata secondo i metodi dell’agricoltura biologica, si estende su Gevrey-Chambertin, Chambolle-Musigny e Morey-Saint-Denis. I vini, dagli aromi fruttati ricchi e maturi e invecchiati in modo perfetto, sono particolarmente apprezzati dai critici e dalle guide di riferimento, nonostante la grande discrezione della tenuta. I vini più importanti dell’azienda sono presenti nelle carte dei vini di ristoranti del calibro di Taillevent o dell’hotel Le Bristol di Parigi, eppure i loro nomi non dicono nulla a numerosi appassionati! L’attuale proprietario andrà presto in pensione e non è prevista nessuna successione; probabilmente quindi quest’azienda formidabile della Borgogna sta producendo le sue ultime annate.
