If Chablis is considered as the kingdom of Chardonnay, then Saint Bris, located between Auxerre and the Chablis region, is the only appellation in Burgundy to perfect Sauvignon Blanc. It is possible to notice a slight influence of Sancerre in this wine, which lies about a hundred kilometres to the west. The soils in this area are similar to those in Chablis, made up of Kimmeridgian and Portlandic limestone and the vines are around thirty years old, planted on a steep north-facing slope. Harvested at optimal ripeness, the grapes are destemmed, sorted and then macerated in contact with the skins for some hours before being pressed. The juice is then left to ferment in stainless steel vats at low temperatures, during which time malolactic fermentation takes place, before a maturation period of 8 to 12 months.
Enriched with a bright golden colour, this Saint Bris has an intense fresh and mineral aroma, with hints of citrus fruits and lychee. The palette is slightly austere, but offers a beautiful balance between a bounty of aromas of peach and pear and taut minerality. A wine best enjoyed within five years.
