Domaine Jean-Baptiste Sénat, at the heart of the Minervois AOC, covers some fifteen hectares. The running of the family business was taken over by Jean-Baptiste and his wife Charlotte in 1996, despite having had no plans to follow this path… proof that a qualification in politics can take you anywhere! The property they inherited is very rich in wine terms, with many old vines (some more than a hundred years old). They cultivate their vineyard organically, work their soils, de-earth under the vines, etc. The intention is to produce "vins de terroir" which are well made and full of fruit. This domain has risen to become one of the most emblematic and sought after in Languedoc.
Cuvée Ornicar is wonderfully fragrant with an irresistible texture. The Grenache and Cinsault grapes come from 50-year old vines. They are fermented in whole clusters and the wine is then aged for six months in barriques. This is a sensitively made wine, far from the clichés you sometimes read about Languedoc wines.
