Domaine Hudelot works in AB, Agriculture Biologique certified organic farming. The vineyard extends over 22 hectares and produces 5 different cuvées in the villages of Villars-Fontaine, Curtil-Vergy, Segrois and Concoeur. Interestingly, besides Pinot Noir and Chardonnay, the domaine also produces a little Aligoté. Patrick Hudelot has, in parallel, a small high quality trading house, DPH Patrick Hudelot.

The Clos de Bèze Chambertin from Hudelot comes from a plot located on a hillside and a brown earth soil from silt and gravelly scree. The grapes are destemmed, and the wine is vinified naturally in open wooden vats, with pigeage (punch down). It is then élevaged in completely new oak barrels for 18 months. This wine presents a perfect balance between richness, elegance and power, developing complex aromas of licorice, undergrowth and spices over the years.
