Since the mid 1980s Château Revelette has been run by the talented producer Peter Fischer, who has always been switched on to natural winemaking. Sheltered by Mount Sainte Victoire, the vineyard lies on the northern-most terroir of the Coteaux d'Aix-en-Provence appellation; characterised by their harsh, cold winters and dry, hot summers. Peter Fischer has boundless enthusiasm for making real wine; cultivating 11 different varieties over 17 plots situated at an altitude of between 330–400 metres. He obtained organic certification 20 years ago – favouring grass cover in the vineyard, limited copper dosage, green harvesting and manual cultivation – and his alchemic work in the winery respects tradition, but is endlessly attentive and vintage-specific. He has recently switched over to egg-shaped concrete tanks for his white wines.
This rosé comes from the northen-most terroir of this appellation. A blend of Grenache, Cinsault, Carbernet-Sauvignon and Carignan, the grapes are harvested by hand and vinified according to the “bleeding” method. Malolactic fermentation is blocked to retain acidity. The resulting wine has a delicate pale hue, lots of freshness with pleasant stoned-fruit aromas. Supple and refined, it pairs perfectly with simple, delicately flavoured dishes like Mediterranean vegetables cooked in olive oil.
