The brilliant wine-maker Jean-Marie Guffens is hidden behind the maison Verget. His wines prevail as the best of the Mâconnais. This brand created in 1990 in Sologny brings together all the wines of its trading business, with a superb range of appellations, from Chablis to Mâconnais, to highlight the specificities and nuances of each terroir. This Chablis Premier Cru owes its name to the very small premier cru lieu-dit in which it is produced: "Vaillons". These old vines are now more than fifty years old, with a yield of around 25 hl/ha. In the winery, the first juices are vinified in barrels. Élevage is performed in concrete tanks on fine lees for 7 months. The wine is deliciously scented, with fruity aromas (pear, apple) and smoky notes. In the mouth, the wine unfolds with body and power, characterised by an arresting minerality.
