Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
Exclusively crafted from black grapes, this Blanc de Noirs Champagne perfectly reflects the winemaker’s wish to produce the purest wines possible. Biodynamic practices combined with controlled yields in the vineyard and in the cellar guarantee premium quality raw materials. Each cuvée, produced in limited quantities, is snapped up by connoisseurs.
The bright, deep golden colour is complemented by a fine, persistent effervescence that gently rises in the glass. The complex, intense bouquet reveals elegant aromas of ripe fruit such as cherry and plum, combined with subtle hints of black pepper and liquorice. The palate reveals remarkable complexity and depth, with aromas of cocoa and liquorice perfectly balanced by fine acidity. The persistent, fresh and slightly spicy finish suggests several fine years of cellaring.
