On this particularly petite estate, they go by the motto ‘one parcel, one varietal, one harvest’. These haute-couture wines are incredibly rare, and Cédric Bouchard is a veritable master of the Côte des Bar.

Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
