Domaine Bizot is a very small property: three cuvées are made from a mere 1.7 hectares of vineyards in the Vosne-Romanée appellation. Jean-Yves Bizot lives in the street where Henri Jayer used to live and he uses his techniques for his wines; fermentation at low temperature in truncated wooden vats, for example. Bizot wines are bottled by hand, barrel by barrel, without filtration.
Pinot Noir is a mysterious and complex grape variety native to Burgundy that has made a significant contribution to the worldwide reputation of the region’s wines. Convinced of its short- and long-term benefits, Domaine Bizot diligently applies methods akin to biodynamics. All chemical fertilisers and weedkillers are prohibited, and the winemaker has adopted a gentler, more environmentally friendly approach to viticulture. The estate limits mechanical work during the harvest. The meticulously sorted fruit is transported to the winery, where it undergoes traditional, low-intervention vinification.
This expressive, vibrant and juicy 100% Pinot Noir reveals a dazzling bouquet of fruit and spicy touches. The pure and light palate delicately delivers succulent aromas of red fruit, leading to an airy and perfectly balanced finish. This cuvée promises excellent ageing potential.
