Daftmill is one of the nine distilleries still in operation in the Lowlands of Scotland. Although it opened in 2005, production only really began in 2006. Daftmill is owned by Francis and Ian Cuthbert, whose family have worked the land there since the 1980s. Daftmill’‘s unique character lies in its traditional production methods. All the barley used is grown by Francis Cuthbert on the family land (only one other distillery uses barley grown exclusively on its property—Ballindaloch—but its malt won’‘t be available for at least another six years). The whisky is distilled at the farm in the inter-season period, during two months in the summer and two in the winter. Daftmill has one of the smallest production’‘s in Scotland, averaging just 100 casks a year. It is also the only distillery authorized to use the term “Single Estate Farm Distillery”.
This Daftmill 12 year old small batch was distilled at the very end of 2007 and bottled in 2020. In addition to a small quantity of exceptional single casks, every year the distillery releases two batches of whisky bottled at 46% ABV. For this 2020 winter release, the distillery blended together seven first-fill bourbon casks to recreate the distillery’’s trademark fruity, herbaceous and incredibly fresh style.
