Daftmill is one of the nine distilleries still in operation in the Lowlands of Scotland. Although it opened in 2005, production only really began in 2006. Daftmill is owned by Francis and Ian Cuthbert, whose family have worked the land there since the 1980s. Daftmill’‘s unique character lies in its traditional production methods. All the barley used is grown by Francis Cuthbert on the family land (only one other distillery uses barley grown exclusively on its property—Ballindaloch—but its malt won’‘t be available for at least another six years). The whisky is distilled at the farm in the inter-season period, during two months in the summer and two in the winter. Daftmill has one of the smallest production’‘s in Scotland, averaging just 100 casks a year. It is also the only distillery authorized to use the term “Single Estate Farm Distillery”.
A Daftmill Summer Batch Release distilled in 2006 and bottled after 11 years’’ maturation in bourbon casks from the Heaven Hill distillery. A limited edition of 1,665 bottles produced from barley harvested on 31 August 2004 and grown at the Dam Park and Curling Pond farms.
