At the heart of Seca, a small town in Castilla y Leon, different generations of the Cantalapiedra family have worked passionately, crafting wine. Nearly 21 hectares of vines aged around 30 years grow in the birthplace of the Verdejo variety. The soils are mainly composed of gravel but there are also some clay, sand, and limestone spots too. The region’s terroir is defined by its distinctive mantle of pebbles, which plays a crucial role in shaping the character of the Verdejo grape. Aware of today’s environmental issues and committed to offering authentic cuvées that reflect the purest expression of the terroir, the estate adheres to strict biodynamic principles and is certified organic. After the grapes are harvested entirely by hand, vinification takes place with as little intervention as possible to conserve their excellent quality. Fermentation is started by natural yeasts and minimum sulphur is added.
In the Castilla y León region, the Cantalapiedra family’s estate stretches across some 20 hectares of vines where Verdejo reigns supreme. The vines thrive in soils rich in limestone, clay, pebbles and sandy gravel, which contribute to the distinct personality of the wines. At the helm of the estate is Manuel Cantalapiedra, a visionary in the region, fiercely dedicated to his terroir and committed to organic and biodynamic winegrowing practices.
This is how he creates this white wine, made from various plots of Verdejo vines, each between 20 and 30 years old. These vines flourish in rocky, clay-rich silty soils with little limestone, before being hand-harvested and transported to the winery in small 15kg crates. Sulphur is completely excluded from the winemaking process, which is characterised by direct pressing, a 12 to 24-hour settling period, and a 40-day natural fermentation initiated by native yeasts. To preserve the delicate aromas, fermentation takes place under temperature control (15°C) in stainless steel vats. Following the malolactic fermentation process, the wine is aged on its lees for eight months in 225-litre French oak casks, developing softness, fullness and flavour.
This wine reveals a round, complex profile with a rich aromatic bouquet. Hints of beeswax, salt, lemongrass, fennel, and cream complement notes of stone fruit and citrus. A vibrant acidity runs through the wine, providing a welcome freshness.
