The Bimber distillery, built in 2015 in Park Royal, in north-west London, was the first distillery to appear in the capital for over a century, following the closure of the last in 1903. Bimber, which is Polish for “illicit alcohol’‘, was named by founder Dariusz Plazewski, who grew up in a family of distillers and moved to London in 2003. Distillation began the following year and the first single malt was released in 2019. The company sources its barley from a single producer, uses traditional malting floors and favours slow fermentation (seven days in wooden washbacks). This artisanal approach continues with the use of gas-fired Spanish Hoga stills. The ambitious distillery has met with great success and new editions are always highly awaited.
A single cask Bimber matured in a Pedro Ximenez cask (#46) and bottled at cask strength in 2020.
