Located in Sury-en-Vaux, to the north of the Sancerre appellation, domain Claude Riffault spans 15.3 hectares, covering 10 lieux-dits. The vineyard is placed with a majority of Sauvignon Blanc (10.5 hectares), completed by 3 hectares of Pinot Noir. Stéphane Riffault obtained organic certification in 2016. Yields are limited by debudding and cordoning. Vinifications are traditional and élevage is precise. The domain has greatly improved these past years, and their cuvées are becoming more and more sought after.
The La Noue parcel is made up of 7 different kinds of vines between 8 and 56 years old – they are planted in clay-chalk and kimmeridgian marl soils. This is one of the closest parcels to the domain in Sury-en-Vaux. There is an abundance of Pinot Noir across the 2.5 hectares of vines, and this is where Stéphane produces the cuvée. There is also a rosé made from the grapes of this parcel. After picking the grapes by hand, they are carefully sorted before vatting. Stéphane carries out only a light extraction in order to preserve the grape aromas, a process that allows the terroir and its characteristics to show through. The wine is matured for 12 months. We recommend pairing this wine with a delicious dish of red meat.
