Located in Sury-en-Vaux, to the north of the Sancerre appellation, domain Claude Riffault spans 15.3 hectares, covering 10 lieux-dits. The vineyard is placed with a majority of Sauvignon Blanc (10.5 hectares), completed by 3 hectares of Pinot Noir. Stéphane Riffault obtained organic certification in 2016. Yields are limited by debudding and cordoning. Vinifications are traditional and élevage is precise. The domain has greatly improved these past years, and their cuvées are becoming more and more sought after.
The Boucauds parcel is located right next to the domain on clay-chalk soil and marly earth. The vines are between 10 and 50 years old, and are exposed to the south-east at an altitude of 200-235 metres. These elements all confer richness and minerality to this cuvée. The grapes are picked by hand before a careful sorting process. They are then pressed pneumatically and the must is clarified at low temperatures. Vinification take place in stainless steel vats and barrels. Maturation takes 7-8 months on lees with some stirring. This wine reveals aromas of white fruit and citrus, being a Sauvignon at once ample and solid. It has a lovely acidity and a delicate minerality. We recommend serving this cuvée with fish and crustacean dishes.
