La Chablisienne is an emblematic Burgundy cooperative. Founded in 1928 in Chablis, it includes around 1,200 hectares of land, bringing together almost 300 wine makers. It covers 6 grands crus, 15 premiers crus, Chablis and Petit-Chablis. All the wine makers grow the grapes with a care propitious of the coveted wine produced here. The cellar was even voted cooperative of the year by the RVF in 2014.
The Chablis region never fails to surprise us with the quality of its wines. The cuvée ‘Les Vénérables’ is no exception. The vines are around 35 years old and are planted on soils of limestone and Kimmeridgian marl typical of Chablis. Fermentation takes place in vats and the wine is then matured for 14 months on fine lees in vats and barrels. Contact with the lees confers depth and density to the wine. The colour is bright and limpid. The first nose is intense and rich with floral notes and white fruit. On the palate, this wine is deliciously silky and mineral. Fantastic aging potential.
