The Pouilly-Fuissé from Domaine Cordier is the fruit of thorough growing and meticulous vinification by a property striving to craft fine, white wines equal to those of the Côte d’Or. The identity of the terroir is preserved beginning with work on the soils and the vines themselves. Wild yeasts come into action in the winery, temperatures during fermentation are strictly controlled, and the wine matures at length on lees and in wood, where it gains substantial flavour and texture.
In the glass we find a pale golden wine that exhales notes of white fruit, citrus, exotic fruit, white flowers, and minerals. Its palate balances the vivacity of the grape with the richness of its maturation.
We recommend savouring this cuvée in its first ten years, at least after three, alongside flavourful dishes like freshwater fish, creamy risotto, or a cauliflower and parmesan gratin.
