The Puligny-Montrachet premier cru Les Chalumeaux from Domaine Jean-Marc Boillot has a bright yellow hue that introduces a certain density. Its aromatic bouquet is marked by floral and fruit notes, as well as almond and hazelnut. Hints of butter and baking were conferred into the mix during maturation. On the palate, it has a gentle attack. It then reveals all its charm through a beautiful structure, mineral touches, and a masterful minerality that ensures persistence and a good ageing potential. It can thus be kept for up to fifteen years in the cellar before serving alongside flavourful dishes like noble fish or poultry in sauce.
To craft it, the domain opted for sustainable growing through ploughing, controlled yields, and healthy competition between the roots. In the winery, the grapes are vinified in whole bunches. Alcoholic fermentation takes place in oak casks, as well as a complete malolactic fermentation. Weekly stirring resuspended the lees, a process the brings particular aromas and texture to the resulting wine. It was then matured for eleven months in oak casks.
