Located in Vernou sur Brenne, in the heart of the Vouvray appellation, domain Vincent Carême was founded in 1999. The 14-hectare vineyard was planted entirely with Chenin by Vincent Carême and his wife, who have practiced organic farming since 2007. In the winery, vinifications are carried out in barrels and casks, using solely ambient yeasts; the wines are then matured for 12 to 18 months in vats? The vineyard now spans just over 17 hectares. Première Trie is a Loire dessert wine produced from a flint and clay soil over limestone. Careful harvesting by hand enables the selection of grapes which are raisined and affected by noble rot. This dessert wine develops heady aromas of ripe fruits and quince jam on the nose, and is built around an attractive tautness which combines perfectly with the wine's sugars.
