Domaine des Tilleuls is an excellent name that is passed on by Burgundy connoisseurs. The 1920 family domaine is located in the heart of the village of Gevrey-Chambertin. It is now Philippe Livera’s son, Damien who runs the domaine. The vineyards are managed in a responsible, sustainable way to minimise the use of external substances. The vines, almost exclusively of Pinot Noir, are covered in grass. Special care is taken for the soil. The domaine has very beautiful plots in the appellations Gevrey village, Fixin, Côtes-de-Nuits-villages and Chapelle-Chambertin. Fermentation is long and all wines are aged in oak barrels for 11 to 18 months.

The domain’s Fixin is matured for 12 months in new barrels (30%), conferring a pleasantly spicy element and silky tannins. This wine would be perfect served with small game.
