Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
The Vaudésir parcel is located in Chablis between les Grenouilles, Valmur and les Preuses, and its soil is kimmeridgian, exposed to the south-east. Domaine Billaud Simon owns 0.5 hectares of this parcel, with 32-year-old vines.The grapes are picked by hand before being pressed pneumatically. The alcoholic fermentation takes 15 to 18 days, then the wine is matured for 14 months, sometimes in French oak casks. The nose offers up intense aromas of ripe white fruits (apple, pear) and citrus fruits, white flowers, hazelnuts, mint and a touch of salinity. At once rich, powerful, well-rounded and fresh on the palate, with a lovely, mineral length. We recommend serving it with fish or goats’ cheese.
