Situated opposite the stunning Hyères islands in Bormes-les-Mimosas, nestles the stunning chateau of Léoube. Romain Ott is a fourth-generation winegrower, devoted to the production of well-balanced, organic wines. Ott trained as an agricultural engineer and specialised in oenology, bringing new energy and enthusiasm to the domaine when he took over in 2000. The wines here have a distinct identity: consistently expressive, elegant and balanced. There are just 60 ha of vineyard among the estate’s 560 ha sprawl, which also includes several hectares of olive groves.
The Léoube rosé is a blend of Grenache and Cinsault complemented by touch of Syrah and Mourvèdre grapes which are grown on a mixture of schist and clay soils. The vineyard’s close proximity to the sea and the cooler nights provide the ideal climate for viticulture. Once in the winery, the fruit is manually sorted according to parcel and gently pressed to achieve as much colour as possible in the juice. The resulting wine retains real freshness thanks to controlled temperatures during the alcoholic and malolactic fermentations. The latter process gives a pleasing unctuous quality to the wine, producing its fruity, delicately spiced notes. Persistent in the mouth with great drinkability, this is an accomplished rosé with fantastic food pairing versatility.
