Frédéric and François Alary have been in charge of Domaine de l’Oratoire Daint-Martin since 1984 and represent the 10th generation of winemakers at the head of this vineyard! The great majority of this domaine is located to the north east of the Cairanne commune at around 200 metres altitude on a steep hill in an area known locally as “the mountain”. The domaine is certified biodynamic, yields are low and grapes are picked at optimum maturity. Elevage takes place in concrete vats, demi-muids or foudres. This producer is regarded as one of the best in Cairanne (along with domaine Richaud) and deserves its reputation as a reference!
Mourvèdre, Syrah and Grenache come from very old vines (70 years old) grown in an organic and biodynamic manner on clay and chalk-rich soils. The grapes are harvested manually with sorting and destemming of the grapes. The wine is aged for two years in foudres and is bottled without fining or filtration. The wine should be enjoyed at 15-16 °C and can be kept for six to eight years. On the nose, there is a bouquet of ripe fruit, violet and nutmeg. The palate offers surprising flavours which oscillate between spices, pepper and roasting aromas. A lovely wine to enjoy with lamb chops with aromatic herbs.
