The wine
François Carillon figures among the finest producers of white wine in the Côte de Beaune. The Puligny-Montrachet premier cru Les Enseignères is an ode to Chardonnay. From clay-chalk soils and biodynamic production, the wine was fermented in oak barrels before being matured for a year and a half in vats. Its depth and tension are wonderfully balanced and persistent. This wine can be enjoyed within ten years alongside sophisticated dishes such as noble fish or nice poultry.
About the Producer François Carillon
The Carillon family has been established in Puligny-Montrachet since the 16th century. In 2010, the family vineyard was shared between the two brothers, François and Jacques. François Carillon cultivates 6.5 hectares and also runs a trading business. The domaine produces great white wines.
