The vines are grown organically and biodynamically by Paul Old and Hugo Steward, from opposite sides of the world but both totally enamoured with the Roussillon region. The grapes are harvested by hand, with 5% kept as whole bunches. The juice is fermented using only indigenous yeasts. Finally, there is a nine-month maturation on lees in stainless steel vats. The result is brilliant, full of energy and freshness.
