Counoise, a grape variety somewhat forgotten in France, is cultivated by Chris Brockway in his Berkley winery. Selected following the principles of sustainable viticulture, this wine is pure, simple and cohesive with food. The grapes are destemmed then fermented in open, truncated vats made of oak. The élevage takes place in old, German barrels of 600-1200 litre capacity. This grape is generally used for blending in the southern Rhône, but here it gives off a pleasant profile with a peppery finish.

The wine
