Created in 2005, the Pierre-Yves Colin Morey domaine extends over 6 hectares on the Saint Aubin and Chassagne-Montrachetet appellations. After learning about his father's domaine (Marc Colin), Pierre-Yves decided to start his own domaine with his wife Caroline Morey. Mentioned by the specialised press as one of the "most gifted winemakers of his generation" (Revue du Vin de France), his wines, mostly from Chassagne, Meursault and Saint Aubin, must be discovered. Pierre-Yves Colin runs this small domaine with his wife Caroline, completing the production by buying grapes (one third of the volume). In the vineyards, responsible and sustainable farming prevails and in the winery, vinification needs little intervention. One of the strong points of this field is the élevage, which is mainly in demi-muids and is very subtle. This name, widely recognised by fans and professionals, is undeniably a safe bet!
Committed to preserving its exceptional terroirs, the estate lavishes its vines with meticulous and sustainable care to successfully capture the finest facets of the Chassagne-Montrachet appellation. During the harvest, the Chardonnay grapes are picked to strike the perfect balance between freshness and optimum ripeness. In the winery, the harvested fruit is pressed in whole bunches to obtain concentrated, intense and complex juices. The musts then ferment in 350-litre casks, including 30% new wood. Lastly, the cuvée is carefully aged for fifteen months and bottled unfiltered.
The bright gold colour is accented by a floral bouquet dominated by hawthorn, acacia and honeysuckle combined with subtle hints of hazelnuts. The rich, full-bodied mouthfeel leads delicately to a fresh, flavoursome finish brimming with lingering aromas.
