The Mont de Milieu Hill, located in the heart of Chablis, reveals a unique terroir bathed in sunlight from dawn to dusk. Here, the Chardonnay vines flourish on soils consisting of clay, limestone, and small pebbles. Once hand-harvested, the grapes from each parcel are carefully sorted and vinified separately. After the grapes have been gently pressed in a pneumatic press, the juice is placed in stainless steel vats in an underground cellar. All stages, from reception to juice run-off are carried out by gravity. Fermentation is triggered by natural yeasts and ageing is as natural as possible to allow the wine to express its terroir. The wine, with its subtle golden reflections, unveils a fragrant bouquet exuding with aromas of yellow peaches and quince. On the palate, an explosion of freshness emerges, marked by a superb balance of citrus notes and a lovely minerality, leading to a long, elegant finish.
