The distillery that produces Starward whisky was founded in 2008 by David Vitale in Victoria, Australia and in 2016 moved to a larger site in Port Melbourne. Various types of cask are used for maturation including casks previously containing Apera, a fortified wine produced in South Australia in similar methods to Andalusian sherry. The young distillery has strong connections to Melbourne’s prolific culinary culture and often presents its whiskies paired with varied dishes or in cocktails.
This Starward 2016 single cask was selected by La Maison du Whisky for its 2020 annual catalogue French Connections. It was aged for four years in a cask previously used for the Australian fortified wine Apera. A limited edition of 240 bottles.
