Domaine de Cassiopée, located in the heart of the charming Burgundy commune of Sampigny-lès-Maranges, is run by Hugo and Talloulah Mathurin, a young couple of enthusiastic winemakers. Established in 2020, the vineyard boasts 5 hectares of vines stretching across some of the region’s finest appellations. Their ambition is to produce wines that perfectly reflect the identity and characteristics of each of their plots. To achieve this, they cultivate each parcel in a specific way, providing them with all the care they need. Each step in the vineyards is carried out with the utmost respect for the soil and biodiversity. In the winery, vinification involves minimal intervention and sulphur is used in minute quantities. It is in this peaceful, harmonious setting that the young winemakers produce fragrant, authentic wines that perfectly reflect the grape varieties and terroir in the purest Burgundian tradition.
Nestling in the heart of the Côte de Beaune, the en Gerlius climat is home to plots of Aligoté, some of the vines are on average thirty-year-old while others are close to eighty-five. The Aligoté vines stretch along a north-east-facing slope, near the commune of Chassey le Camp. Each parcel is organically farmed, combined with a natural approach and a number of biodynamic practices. During vinification, the two sections of Aligoté vines are aged separately before being blended and bottled.
The pale colour graced with light green tints reveals an expressive nose of fruit and floral aromas with a hint of minerality. The taut, lively palate reveals superb balance, leading to a fresh, flavoursome finish. An authentic and delicious cuvée to be enjoyed young.
