Domaine de Cassiopée, located in the heart of the charming Burgundy commune of Sampigny-lès-Maranges, is run by Hugo and Talloulah Mathurin, a young couple of enthusiastic winemakers. Established in 2020, the vineyard boasts 5 hectares of vines stretching across some of the region’s finest appellations. Their ambition is to produce wines that perfectly reflect the identity and characteristics of each of their plots. To achieve this, they cultivate each parcel in a specific way, providing them with all the care they need. Each step in the vineyards is carried out with the utmost respect for the soil and biodiversity. In the winery, vinification involves minimal intervention and sulphur is used in minute quantities. It is in this peaceful, harmonious setting that the young winemakers produce fragrant, authentic wines that perfectly reflect the grape varieties and terroir in the purest Burgundian tradition.
Since its inception, the Cassiopée estate has cultivated its vines in accordance with organic farming principles, combined with a natural approach. A number of biodynamic principles are also applied, particularly in the winery, where the lunar cycle is closely adhered to. The estate prides itself on owning two plots situated in the area known as Les Côtés, nestling to the south-west of Sampigny, where Chardonnay vines thrive on clay-limestone soils. The vines grow on the site of an ancient forest, where the typical soil full of life contributes to the uniqueness of the wines. The harvested grapes undergo a low-intervention vinification process, with long post-fermentation macerations.
The bright golden colour reveals a bewitching bouquet exuding with intense aromas of exotic fruit combined with subtle hints of white flowers. The lively, frank palate affirms the aromas of the nose while leading to a persistent, flavoursome finish.
