Petit Chablis, meaning "small" in name only, stretches out on either side of the Serein Valley, forming one of the crowns of the Chablis region. Clotilde Davenne grows her Chardonnay vines on two plots in this Burgundian landscape: one in the village of Préhy, facing west, and the other in Chantermerle, in the village of Chablis itself, facing due south. The roots draw all their richness from the Kimmeridgian soils typical of the region, alternating between clay and fossil limestone, conferring an impressive minerality on the cuvee.
Nurtured according to the High Environmental Value approach, the grapes undergo a precise vinification process that respects their natural expression. Spontaneous fermentations are controlled at low temperature, before the wine is matured for 8 to 12 months before filtration and bottling.
The clear, brilliant golden colour goes hand in hand with a lively nose, expressed by a bouquet of citrus fruit and white flowers. Fresh and mouthwatering, this cuvée promises a light, fruity experience, with apple and pear competing for the limelight. The flavours are continually enhanced by a pleasant saltiness.
