The Chablis region, home to some of France’s finest white wines, needs no introduction. But there’s no end of introductions to Clotilde Davenne, who brings her own personal touch to this legendary terroir. Her knowledge of the land and soils is flawless, and she cultivates her plot near the village of Courgis, in the south of the region. The vines flourish on Kimmeridgian soil, rich in minerals, and benefit from an abundance of light thanks to their south-facing exposure.
Once harvested at optimum ripeness, the grapes are carefully sorted, destemmed and pneumatically pressed. Fermentation and ageing, which lasts 8 to 12 months, are performed in stainless steel vats to preserve the freshness and liveliness of the fruit.
In the glass, this cuvée boasts a crystalline, green-tinged colour. A typical nose immediately emerges, with scents of stone and iodine underlining the aromas of vineyard peach, lemon and almond. The palate is round and full, accentuating the mineral flavours. The wine is well balanced and pleasantly fresh right through to the finish.
