Information
Vaucoupin is one of the two Premier Crus located in Chichée, a village south of Chablis, and it stretches over a south-facing, steep slope on the right bank of the Serein river. The Chardonnay grapes are grown on a Kimmeridgian limestone terroir, which is rich in marine fossils and shares the same characteristics as Chablis.
Clothilde Davenne sources her grapes from here, which she then vinifies and ages in stainless steel vats at a low temperature. Malolactic fermentation is completed during the 12 to 18 month maturation period on fine lees, before being filtered and bottled.
Tasting this Vaucoupin reveals a taut and minerally profile, with a bouquet of citrus fruits, white flowers and flint. Its sculpted body reveals a sharp mineral character, with a beautifully fresh mouthfeel. This wine can be left to mature in the cellar for several years and would pair well with oysters au gratin or smoked salmon.
