Jacques Perritaz unveils his ‘Transparent’ cuvée, a blend of old French apple varieties (Transparente de Croncels, reinette de Champagne, pomme raisin and pomme de Berne). The apples all grow on the highest branches of the trees. This means they benefit from plenty of sunshine which concentrates all their aromas. The orchard is planted on brown clay and schist soil.
Following manual harvests, the juice is partially fermented by yeasts naturally present on the fruit. The nectar is lightly filtered to achieve the desired level of residual sugar. The bubbles forms in the bottle, and the cider maker adds a micro dose of sulphur prior to bottling.
This is a delicious dry cider with irresistible notes of baked apple, sweet spices and white flowers. The palate is lacy, with a pleasantly saline acidity. Airy and refreshing, this is the Vulcain cidery’s flagship cuvée!
