Domaine Christian Binner can boast of precursor status in Aslace when it comes to biodynamic and natural production. Here we have a superb Riesling from the Wineck Schlossberg grand cru. This is a steeply sloped vineyard with soil rich in granite, sand, and pebbles. Domaine Christian Binner has 800 square metres of Riesling, difficult to cultivate in such conditions but with superb, south-facing exposure that encourages ripeness.
In the winery, the grapes are vinified without additives and matured at length in large containers that don’t mark the wine with oaky aromas. It is best enjoyed after a few years of ageing. In the glass, we are enticed by a lovely acidity that confers both freshness and good ageing potential. Complex, it will pair well with gastronomic dishes like poultry with candied lemon or crayfish with avocado.
