Domaine Berthaud’s Gevrey-Chambertin is a single-varietal Pinot noir cuvée grown sustainably at the heart of the appellation in clay- and chalk-rich soil. To best respect the terroir’s identity,t he wine makers leave nothing to chance. The vines are 30 years old on average and are harvested by hand with a very selective sorting process. The grapes are then macerated at low temperatures for a few days to extract colour and flavour from this noble varietal. Alcoholic fermentation is instigated by indigenous yeasts and pumping over is practiced once or twice a day, as well as a method that involves immersion of the marc cap. Malolactic fermentation and maturation take place in oak casks (30% new wood) for 16 months. The wine is then bottled without fining or filtering. In the glass this is a Gevrey-Chambertin in all its splendour: powerful and concentrated with an intense colour and a complex aromatic bouquet. We find red and black fruit, violet, and earthy aromas with a hint of toasted and spiced notes.
