François Parent took over from his father, who bottled his first vintage in 1955. The domain went on to produce wines sold in the best Michelin-starred restaurants. François Parent also vinifies his wife's wines at A-F Gros. This cuvée was produced until 2006; when the parcel was sold.
The red Burgundy from Domaine Parent is a single-varietal Pinot noir cuvée from relatively young vines that grow in clay- and chalk-rich soil. The harvests are carried out by hand and the grapes are carefully sorted. The bunches are destemmed and there is a cold maceration lasting for 3 to 5 days. The temperature is controlled to avoid marking the wine with undesirable flavours. The juice is punched down and pumped over 2 to 3 times a day to get the best substance from the Pinot noir, noble varietal par excellence. The juice is put into vats for around 10 days before being matured in French oak casks. This is a Pinot noir in all its splendour with a flavourful and crisp character. Notes of red fruit announce a charming palate that can be enjoyed in its youth.
