Domaine de la Cras was bought by the City of Dijon in 2013, and it stretches across 160 hectares between the communes of Dijon, Plombières-lès-Dijon and Corcelles-les-Monts. The idea of this purchase was to preserve the city's green-belt land. Marc Soyard is the wine maker running the 8 hectares of certified organic vines that are worked biodynamically. 5 hectares are planted with Pinot Noir and 3 with Chardonnay. Originally from the Jura, Marc worked for several years at Domaine Bizot in Vosne-Romanée. The most important aspect of his work is his respect for nature. “Wine is a natural thing, a living thing, there's nothing artificial about it.” The vinification carried out involves very little intervention. The wines from this domain can be aged for a few years before being enjoyed.
Near to Dijon, Domaine de la Cras stretches across the plains on which 5 hectares of Pinot Noir thrive. The domain belongs to the Côte d’Or agricultural chambers and is currently run by Marc Soyard, a producer who learnt the trade during his time at Domaine Bizot in Vosne Romanée. The philosophy underlying his work is one that respects wine with low-intervention vinifications. The vines are grown organically with biodynamic methods, and the grapes are harvested by hand. The yeasts used for the fermentation are natural and no sulphur is added. This cuvée has a limpid, ruby red appearance. The nose and palate come together well with notes of red fruit, black cherry and a hint of spice. The tannins are mature. You can age this wine for at least 5 years. Serve it at 15-16°C. It will pair well with a dish like grilled duck or boeuf bourguignon.
