Domaine des Bottes Rouges is located in Abergement-le-Petit (in the Arbois appellation) and was founded in in 2011. At the time, it was 2.5 hectares, but has since been extended to seven. Wine was a part-time passion project for owner Jean-Baptiste Ménigoz for ten years, managing 60 acres of vines in 2000 and cut his teeth at Domaine André et Mireille Tissot.
The terroir contains clay subsoils. The “No Milk Today” cuvée comes 100% from Savagnin. The vines are on average 40 years old. The harvest is done by hand and the estate is certified organic. In the winemaking process, little intervention is preferred here. First the grapes are macerated for 15 days. These have been 100% destemmed (by hand) and then gently pressed. Aging lasts 6 months in stainless steel tanks. The wine is neither fined nor filtered and the added dose of sulphur is minimal.
The aromas are of dried fruits and on the palate a well-balanced acidity. This macerated Savagnin has a pleasant minerality and leaves you wanting more.
This natural wine is a gem! Delicious in its youth (1 to 5 years). Open two hours in advance and serve at 12 ° C, accompanied by a Blanquette de Veau, roast chicken, or lemon zest sea bream.
