Information
Situated in Pommard, Domaine Jean-Marc Boillot crafts a Puligny-Montrachet premier cru of great elegance. The Chardonnay is grown sustainably on a slope of marl- and chalk-rich soil. The roots are encouraged to compete with each other due to high-density planting. The soil is ploughed to force these roots deep into the soil in order to draw their nutrients. The harvests are completed by hand and the grapes are taken to the winery in small cases to avoid damaging them.
In the cellar, the grapes are vinified in whole bunches, including direct pressing, alcoholic fermentation in casks, full malolactic fermentation, and weekly stirring to re-suspend the lees. The wine is matured in casks.
In the glass this is a golden yellow wine that announces a rich profile. On the nose, we find notes of white fruits, white flowers, and fresh almond.
We recommend serving this gently unctuous and mineral cuvée with dishes in sauce or recipes with a maritime touch.
