Created in 2005, the Pierre-Yves Colin Morey domaine extends over 6 hectares on the Saint Aubin and Chassagne-Montrachetet appellations. After learning about his father's domaine (Marc Colin), Pierre-Yves decided to start his own domaine with his wife Caroline Morey. Mentioned by the specialised press as one of the "most gifted winemakers of his generation" (Revue du Vin de France), his wines, mostly from Chassagne, Meursault and Saint Aubin, must be discovered. Pierre-Yves Colin runs this small domaine with his wife Caroline, completing the production by buying grapes (one third of the volume). In the vineyards, responsible and sustainable farming prevails and in the winery, vinification needs little intervention. One of the strong points of this field is the élevage, which is mainly in demi-muids and is very subtle. This name, widely recognised by fans and professionals, is undeniably a safe bet!
An icon of Chassagne-Montrachet, Domaine Pierre-Yves Colin-Morey crafts a Saint-Aubin premier cru by the book, in which pure fruit blends with beautiful maturity.
To craft this cuvée, the domain works its vines meticulously. They enjoy the influence of soil rich in chalk and clay, as well as exposure to the south-east. The domain avoids stirring, leaving the lees suspended where they can confer texture and slightly milky aromas to the wine. Maturation is long in 350-litre demi-muids (rare for the region), followed by bottling with no fining or filtering.
This cuvée can be enjoyed at any point in its first ten years. It then reveals a golden yellow colour that exudes a complex bouquet of citrus, white fruits, white flowers, and fresh almonds. The palate is guided by a minerality nuanced by a lightly oaky touch.
