Information
Although Alice (from the Jura) and Olivier (from Burgundy) De Moor export most of their production, they have over the years forged an excellent reputation for themselves. Their wines have been certified organic (Ecocert) for 10 years. With low yields, manual harvests and very little sulfur used, these two winemakers visibly work with meticulous care both in their viticulture and vinifications. The 2009 vintage marked their first year running a small négociant business on the side, in the Chablis and Chablis Premier Cru appellations.
Typical of its appellation, this Chablis presents a tense profile marked by the minerality of its terroir. The nose reveals notes of fresh pineapple and flint. This wine is best opened an hour before serving, after being aged for a few years in the cellar.
