About the producer

At the Paonnerie, wine is made as an art. In the Carroget family for five generations, the domain is found on the right bank of the Loire between Angers and Nantes. The wine makers have decided to produce biodynamically in order to energise their soils. The harvests are carried out by hand, taking care to pick out only perfect grapes. The idea is to add no sulphites during vinification. Making a ‘natural' wine has to involve impeccable sanitary practises so that there are no faults in the final result. The Paonnerie manages this masterfully. With the majority of their wines made from local varieties (Melon de Bourgogne, Gros Lot, Pinot d'Aunis…), the domain gives us a wonderful insight into the Loire's viticultural identity.
