Elisabeth and Marie-Laurence Saladin, the daughters of Louis and Annick Saladin, are now at the head of the estate that has been in the family for 21 generations, since 1422. Using organic methods, the 18 hectares are located on the terraces of Saint Marcel d'Ardèche.There, they tend Carignan, Mourvèdre, Syrah, Viognier, Clairette Rose, Clairette Blanche, Bourbenlec, Marsanne and Roussanne vines.
The hand harvested grapes and carefully sorted in the winery before they are vinified using natural yeasts. It results in wines that perfectly reflect the characteristics of the terroir. The red wines are matured in oak barrels and concrete vats, while the white and rosé wines are matured in stainless steel vats.
This cuvée is produced from the family's oldest Black Grenache and Clairette vines which are planted together in the same vineyard. The grapes undergo semi-carbonic maceration and are vinified naturally with an absolute minimum of sulphur. After this the wine is matured in tanks for nine months. The final result is a rounded and delicious wine with notes of very ripe black fruits and sweet spice. The Clairette adds a welcome touch of freshness on the finish. Pairing with a nice cut of red meat (grilled or roasted with aromatic herbs) is highly recommended.
