La Cavale is located in Cucuronau, in the heart of the Luberon natural park. It is owned by Paul Dubrule (co-founder of the Accor group). One of the buildings on the estate was designed by the architect Jean-Michel Wilmotte; the vineyard spans 42 hectares. Eight different grape varieties are grown here. They have sought advice from Alain Graillot and are currently converting the vineyard to organics (certification expected in 2020). The domain has also striven to reduce its consumption of water as much as possible and produce their own solar energy. The domain produces three wines: Petite Cavale (rosé, white, red), La Cavale (red and white) and Grande Cavale (red), only produced in the best vintages.
This blend of white Grenache, Clairette, Ugni blanc and Vermentino has a golden hue that expresses floral notes completed with smoky notes due to its élevage. The palate is perfectly balanced between creaminess and indulgence with notes of quince, pear and pineapple and fresh citrus notes like lemon. Complex, full-bodied and lingering, it will be delicious with white meat or a sauce-based fish dish.
