The Boillot family has owned vines in Volnay since 1850. A century later, Lucien Boillot acquired vines in Gevrey-Chambertin where he decided to set up his domaine. It is now his son Pierre who now runs the domaine. It therefore has plots in Côtes des Nuits and in Côtes de Beaune on many terroirs, which is rare for a small domaine. The average age of the vines is high (almost 55 years old) which explains the complexity of all the cuvées of the field. The grapes are fully destemmed. The treatments are limited as much as possible, as are the vinification processes which are intended to be as least intrusive as possible (native yeast, élevage with 30% of new barrels. A great name.
Crafted with respect for organic standards, this wine is free to express all the best qualities of its terroir. The 50-year-old vines are grown without any chemicals added to the soil, the harvests are undertaken by hand, and the grapes are totally destemmed. Vinified with indigenous yeasts and matured in barrels for 16-18 months, this wine gains much in terms of substance and character. This wine is bright in colour. Its nose develops delicately with notes of crisp cherry, roasted plum, peony, and leather. On the palate, this wine is particularly voluptuous. To be aged for at least eight years and enjoyed alongside a dish like game, red meat or cheese.
