The Bourgeois-Diaz family has been producing champagne for 4 generations and since 2000, Jérôme Bourgeois-Diaz has been running the 6.5-hectare (ha) family farm in Croutte-sur-Marne. The grape variety is dominated by Pinot Meunier (3.5ha), supplemented by Pinot Noir (2ha) and Chardonnay (1ha). The vines are on average 35 years old and the soil is clay-limestone. In the vineyards, the work is clean and rigorous, organic since 2001 and biodynamic since 2009 (Demeter certification in 2015), a sincere and convinced approach. Similarly, in the cellar, chemical yeast and synthetic sulphur are clearly prohibited and pressing is long and gentle. This dynamic domain ranks among the rising stars of Champagne.
