Thomas Pico spent his childhood in the village of Courgis. His father and grandfather, also wine growers, passed on their passion for the great Chardonnays of Chablis. In 2004, after completing a diploma in engineering, he took over 8 hectares of vines, which he immediately converted into organic farming and created the domaine of Pattes Loup. His wines are models of elegance and among the best Chablis wines.
This cuvée comes from Chardonnays bought by Thomas Pico from wine growing friends in the South (Limoux) who worked organically; it is a "solidarity" cuvée, to respond to the climatic catastrophe of the Chablis 2016 vintage. On tasting it is rich in aromas of citrus and ripe fruit, a fresh, precise, expressive and indulgent palate, ending in a tangy finish. A fine wine to enjoy with friends.
