Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
This cuvée is matured in stainless-steel vats for 15 to 18 months. On the nose, it delivers aromas of candied fruits and mineral notes. Unctuous and elegant on the palate, with a long saline finish. This wine can be aged for a good ten years.
